Siloro D.O.P. Umbria   
There are few better olive oils made than Siloro.
This Italian oil is from Umbria on the Tuscan border near Montepluciano and Cortona. It derives its perfect balance from Tuscany’s big, strong tradition and Umbria’s more mellow background.

Siloro is the finest oil made by Olivestri. Made in very small quantities with the utmost care and attention to quality, with a select mix of olives (Leccino, Frantoio, Moraiolo, Dolce  Agogia) that are picked starting in late October to insure a high percentage of under-ripe fruit, producing the golden-green color and an extraordinarily low .2 degree of acidity, with a perfect balance between fruit and acidity.  The olives are always pressed within 24 hrs. of being picked to insure a fresh-tasting oil very high in polyphenols which are the good-health promoting anti-oxidants that reduce LDL (bad) cholesterol.

Siloro carries the prestigious European Union Seal "D.O.P. Umbria."   D.O.P. certifies that this oil's origin is 100% Umbria.                            Learn More:     What is DOP?

Tasting Notes: Siloro is a golden oil with deep green overtones and a classic Tuscan/Umbrian nose of freshly cut grass and the intoxicating aroma of freshly pressed olives in the frantoio. The tastes are very complex and intense with many overtones. The finish is intensely peppery.  This oil has a perfect structure that, once tasted, will entice you back for more. It's Gold Medal at the Olive Oils of the World competition in the category of D.O.P. Umbria, assures you that it is the perfect example of Umbrian oil.

This oil is for discriminating palates that prefer their olive oils to add character and nuance to their dishes.   This oil is perfect for finishing all roasted meats, it is spectacular used raw over cooked vegetables like asparagus or tomatoes.   It  is also a good general purpose oil for sautéing and preparing all your Mediterranean dishes.

Fiordolio Extra Virgin Olive Oil
Fiordolio is made from the same olives as Siloro, and with the same care and quality control, taken entirely from within the D.O.P. region. Because the oil does not carry the D.O.P. certification it is much more economical. In blind tasting, we have been hard pressed to tell the difference between the Siloro and Fiordolio, so read the tasting notes above to learn about this great oil. 

This is the oil of choice for some of the Bay Area's best Italian restaurants.

Five liter tins are the most economical way purchase olive oil. Did you know that olive oil is only crushed once a year?  The oil you buy in August is exactly the same as the oil you buy in January - provided that you know it is from the current harvest!   5-Liters (1.3 gallons or less than 7 bottles) is a very practical quantity for the average home.
